Ultimate festive leftovers pizza
Do you love pizza, do you hate wasting food?! We have the ultimate Christmas leftovers recipe for you, put it all on a pizza and say no to another year of turkey curry (and it takes a fraction of the time to cook!) As we all know, anything Christmas dinner tastes amazing, and when you combine it with those leftover cheeseboard chunks, whatever combination you have in your fridge will work on your pizza, so while the below is one of our favourite mix ups of flavour, anything goes, make it your own!
What you'll need...
(makes a 10-12 inch pizza)
1x ball of Northern Dough Co Original pizza dough, defrosted (find it in the frozen aisle)
1 tablespoon tomato passata
1 tablespoon cranberry jelly
1 tablespoon pre-cooked sprouts with pancetta
2 tablespoons crumbled blue cheese (or whatever you have to hand)
Handful of kale/ similar green veg e.g. spinach or broccoli
Semolina flour to dust (or plain flour if unavailable)
Pre-heat your oven to its hottest setting, and lightly flour your worksurface, rolling pin (if using) and baking tray. Roll or stretch your dough to approx. 10-12 inches in diameter (this will give you a classic Neapolitan style thin and crispy pizza.
Move your pizza base to the lightly floured baking tray, spread the passata across the surface, then add your leftovers evenly over the top, finishing with the cheese. Move to the hot oven for approx. 8-10 mins. Your pizza will be ready when the crust has turned golden brown and the toppings are bubbling. Remove from the oven and leave to cool for 3-5 mins. As well as preventing burnt mouths, this also helps the pizza topping to ‘set’ and means your toppings won’t slide when you slice into it! Slice, share and enjoy!
